How is protein measured?
The Kjeldahl method determines protein by measuring the nitrogen present in a sample.
During analysis, the sample is digested under controlled conditions. Nitrogen in the sample is converted into a measurable form, distilled and quantified. The measured nitrogen content is then converted to protein using an established conversion factor appropriate to the product type.
Kjeldahl is a well-established protein-testing method with broad international recognition across the dairy, food, cereal and animal feed industries.
